- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons butter
- 2 tablespoons chopped parsley
- 4 medium zucchini, spiralized
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Form into meatballs.
- Place meatballs on a baking sheet and bake for 20 minutes.
- While meatballs are baking, heat butter in a skillet over medium heat and sauté spiralized zucchini for 2-3 minutes until tender.
- Remove meatballs from the oven and add them to the skillet, tossing to combine.
- Garnish with chopped parsley and serve warm.
Notes
- For a gluten-free option, use gluten-free breadcrumbs.
- You can add your favorite herbs and spices to the meatball mixture for extra flavor.
