Description

Delicious garlic butter meatballs served over fresh zucchini noodles for a low-carb meal.


Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons butter
  • 2 tablespoons chopped parsley
  • 4 medium zucchini, spiralized


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20 minutes.
  4. While meatballs are baking, heat butter in a skillet over medium heat and sauté spiralized zucchini for 2-3 minutes until tender.
  5. Remove meatballs from the oven and add them to the skillet, tossing to combine.
  6. Garnish with chopped parsley and serve warm.
