- 1/2 teaspoon vanilla extract
- 1/2 cup powdered erythritol
- 1/4 teaspoon salt
- 1/2 teaspoon black food coloring (optional)
- Sugar-free chocolate chips (for eyes, optional)
Instructions
- Preheat your oven to 225°F and line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy.
- Add the cream of tartar and salt, then increase the speed to high and beat until soft peaks form.
- Gradually add the powdered erythritol while continuing to beat the egg whites until stiff peaks form and the mixture is glossy.
- Mix in the vanilla extract and black food coloring, if using, until fully combined.
- Using a piping bag or a spoon, drop dollops of the meringue onto the prepared baking sheet, shaping them into ghostly figures.
- If desired, place a couple of sugar-free chocolate chips on each meringue for eyes.
- Bake in the preheated oven for 1 hour and 15 minutes or until the meringues are dry and easily lift off the parchment paper.
- Turn off the oven and leave the meringues inside to cool completely for at least 1 hour.
- Once cooled, store the meringue cookies in an airtight container at room temperature for up to a week.
