A delicious and easy recipe for a giant keto-friendly chocolate chip cookie made in the air fryer.
Ingredients

- 1 cup almond flour
- 1/4 cup erythritol
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- In a mixing bowl, combine almond flour, erythritol, cocoa powder, baking soda, and salt.
- Add in melted butter, egg, and vanilla extract; mix until well combined.
- Fold in sugar-free chocolate chips.
- Preheat air fryer to 300°F (150°C).
- Line the air fryer basket with parchment paper, then pour the cookie dough into the basket.
- Shape the dough into a large cookie, about 6 inches in diameter.
- Air fry for 10-12 minutes until the edges are set.
- Let it cool in the basket for a few minutes before transferring to a wire rack.
Notes
- Store leftover cookie in an airtight container to keep it fresh.
