Description

Delicious gluten free and keto-friendly hot pockets that are easy to make and perfect for a quick meal or snack.


Ingredients

Scale
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cream cheese
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cooked meat or veggies (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut flour, baking powder, and salt.
  3. Add mozzarella cheese and cream cheese, and microwave for 30 seconds to soften.
  4. Combine ingredients and knead the dough until smooth.
  5. Divide the dough into equal portions and roll out into circles.
  6. Add fillings of choice and fold the dough over to seal.
  7. Place on a baking sheet and bake for 20-25 minutes until golden brown.
