Description

These delicious gluten free vegan blueberry donuts are soft, fluffy, and bursting with fresh blueberries. Perfect for breakfast or a sweet treat!


Ingredients

Scale
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, combine the almond milk, maple syrup, and applesauce.
  3. In another bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the donut pan, filling each cavity about 3/4 full.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before removing from the pan.

Notes

  • For a sweeter donut, you can add more maple syrup to the batter.
  • These donuts are best enjoyed fresh but can be stored in an airtight container for a few days.
