Ingredients

- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1/2 cup raw almonds, chopped
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the whole wheat flour, almond flour, baking powder, and salt.
- In another bowl, whisk together the eggs, honey (or maple syrup), melted coconut oil, and vanilla.
- Combine the wet and dry ingredients, then fold in the chopped almonds.
- Shape the dough into a log and place it on a baking sheet lined with parchment paper.
- Bake for about 25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before slicing into pieces.
- Return the biscotti to the oven and bake for an additional 10-15 minutes, until crisp.
- Let cool before serving.
Notes
- Store in an airtight container for up to two weeks.
- Adjust sweetness by adding more or less honey/maple syrup.
