Description

These healthy biscotti are a delicious and nutritious snack, perfect for pairing with coffee or tea.


Ingredients

Scale
  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/2 cup raw almonds, chopped
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the whole wheat flour, almond flour, baking powder, and salt.
  3. In another bowl, whisk together the eggs, honey (or maple syrup), melted coconut oil, and vanilla.
  4. Combine the wet and dry ingredients, then fold in the chopped almonds.
  5. Shape the dough into a log and place it on a baking sheet lined with parchment paper.
  6. Bake for about 25 minutes, or until golden brown.
  7. Remove from the oven and let cool slightly before slicing into pieces.
  8. Return the biscotti to the oven and bake for an additional 10-15 minutes, until crisp.
  9. Let cool before serving.

  • Adjust sweetness by adding more or less honey/maple syrup.
