Ingredients

  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine panko breadcrumbs, parsley, dill, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. In a small bowl, whisk together olive oil, lemon zest, lemon juice, and Dijon mustard until well combined.
  4. Place the cod fillets on the prepared baking sheet. Brush the lemon mustard mixture evenly over the top of each fillet.
  5. Spoon the breadcrumb mixture over the cod, pressing gently to adhere.
  6. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  7. Serve immediately, garnished with additional lemon wedges if desired.
