- 2 (6-ounce) cod fillets
- 1 cup panko breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 1 tablespoon Dijon mustard
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a medium bowl, combine panko breadcrumbs, parsley, dill, garlic powder, onion powder, salt, and black pepper. Mix well.
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, and Dijon mustard until well combined.
- Place the cod fillets on the prepared baking sheet. Brush the lemon mustard mixture evenly over the top of each fillet.
- Spoon the breadcrumb mixture over the cod, pressing gently to adhere.
- Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
- Serve immediately, garnished with additional lemon wedges if desired.
Notes
- For added flavor, consider marinating the cod in the lemon mustard mixture for 30 minutes before coating it with breadcrumbs.
- You can substitute the cod with another firm white fish like haddock or tilapia for a different taste.
