Description

These delicious stuffed meatballs are perfect for a low carb and keto diet, packed with flavor and easy to make in the Instant Pot.


Ingredients

Scale
  • 1 pound ground beef
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 jar (24 oz) marinara sauce


Instructions

  1. In a large bowl, combine ground beef, mozzarella, parmesan, almond flour, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Shape mixture into meatballs, about 1.5 inches in diameter.
  3. Pour marinara sauce into the Instant Pot and place meatballs in sauce, careful not to stack them too high.
  4. Close the lid and set the Instant Pot to manual, high pressure for 10 minutes.
  5. Once cooked, perform a quick release and serve with additional marinara sauce if desired.

Notes

  • For a spicier kick, add some red pepper flakes to the meat mixture.
  • Serve over zucchini noodles for a complete low carb meal.
