These delicious stuffed meatballs are perfect for a low carb and keto diet, packed with flavor and easy to make in the Instant Pot.

- 1 pound ground beef
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup almond flour
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 jar (24 oz) marinara sauce
Instructions
- In a large bowl, combine ground beef, mozzarella, parmesan, almond flour, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Shape mixture into meatballs, about 1.5 inches in diameter.
- Pour marinara sauce into the Instant Pot and place meatballs in sauce, careful not to stack them too high.
- Close the lid and set the Instant Pot to manual, high pressure for 10 minutes.
- Once cooked, perform a quick release and serve with additional marinara sauce if desired.
Notes
- For a spicier kick, add some red pepper flakes to the meat mixture.
- Serve over zucchini noodles for a complete low carb meal.
