Description

These Keto Muffins are a delicious low-carb treat perfect for anyone following a ketogenic diet.


Ingredients

Scale
  • 2 cups almond flour
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted butter or coconut oil


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the almond flour, erythritol, cinnamon, baking powder, and salt.
  3. Add the eggs, almond milk, and melted butter to the dry ingredients and mix until well combined.
  4. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let the muffins cool before serving.
