Japanese Miso-Glazed Salmon with Shirataki Noodles delights your taste buds!

- 4 (6-ounce) salmon fillets
- 1/4 cup white miso paste
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 package (8 ounces) shirataki noodles, rinsed and drained
- 1 tablespoon vegetable oil
- 2 green onions, sliced for garnish
- Sesame seeds for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, sesame oil, and grated ginger until smooth.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the miso glaze generously over each fillet.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
- While the salmon is baking, heat the vegetable oil in a skillet over medium heat. Add the rinsed shirataki noodles and sauté for 3-4 minutes until heated through.
- Remove the salmon from the oven and let it rest for a couple of minutes. Serve the salmon over a bed of shirataki noodles.
- Garnish with sliced green onions and a sprinkle of sesame seeds before serving.
Notes
- For added flavor, marinate the salmon in the miso glaze for 30 minutes before baking.
- Substitute the shirataki noodles with zucchini noodles or whole wheat spaghetti for a different texture and flavor.
