Description

John Wayne Casserole is the ultimate comfort dish that combines ground beef, vegetables, and a cheesy topping, all baked to perfection.


Ingredients

  • 2 1/4 cups Bisquick mix
  • 1 cup water
  • 2 pounds ground beef
  • 1/2 cup white onion, diced
  • 1 cup green bell pepper, diced
  • 3 tablespoons taco seasoning
  • 1 (10.5 ounce) can Rotel tomatoes with green chiles, do not drain
  • 1 1/2 cups frozen corn
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 cups Colby Jack cheese, shredded, divided

Instructions

  1. Preheat the oven to 350 degrees F and spray a 9×13 baking dish with nonstick cooking spray.
  2. In a large bowl, combine the Bisquick mix and water until well mixed.
  3. Spread the dough evenly into the bottom of the prepared baking dish. If the dough is sticky, use a spatula sprayed with nonstick cooking spray to help press it out.
  4. In a large skillet over medium-high heat, cook the ground beef, onion, and bell pepper for 5-6 minutes or until the meat is browned. Drain any excess grease.
  5. Stir in the taco seasoning, Rotel tomatoes, and corn, cooking for an additional 2-3 minutes.
  6. Spread the meat mixture evenly over the dough in the baking dish.
  7. In a small bowl, mix together the sour cream, mayonnaise, and 1 1/2 cups of shredded cheese until combined.
  8. Spread the sour cream mixture over the beef layer in the baking dish, followed by the remaining shredded cheese on top.
  9. Bake uncovered for 35-40 minutes or until the cheese is melted and slightly browned.
  10. Allow to cool for 5-10 minutes before serving.

Notes

  • For a spicier kick, consider using Pepper Jack cheese or adding jalapeños to the meat mixture.
  • You can prepare the casserole ahead of time and freeze it unbaked for a quick meal later. Just add a few extra minutes to the baking time if cooking from frozen.
