- 1 cup almond flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup erythritol
- 1/2 cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, salt, and erythritol.
- In another bowl, mix the applesauce, eggs, vanilla extract, and almond milk.
- Add the wet ingredients to the dry ingredients and mix until combined.
- Line the air fryer basket with cupcake liners and fill them halfway with the batter.
- Cook in the air fryer for 10-12 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
- Store leftovers in an airtight container in the refrigerator.
- You can substitute almond flour with coconut flour, but adjust the quantity.
- For a more decadent taste, add sugar-free chocolate chips to the batter.
