Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1/4 cup coconut aminos
  • 2 tablespoons peanut butter (sugar-free)
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 2 teaspoons garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Wooden or metal skewers
  • 1 medium cucumber, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon erythritol (or other sugar substitute)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. In a large bowl, combine coconut aminos, peanut butter, lime juice, sesame oil, garlic powder, ground ginger, red pepper flakes, salt, and pepper. Mix well to create a marinade.
  2. Add the beef cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. While the beef marinates, prepare the cucumber acar. In a separate bowl, whisk together apple cider vinegar, erythritol, salt, turmeric, and black pepper until the erythritol is dissolved.
  4. Add the sliced cucumber to the vinegar mixture and toss to coat. Let it sit for at least 30 minutes to allow the flavors to meld. Stir in chopped cilantro just before serving if desired.
  5. Preheat your grill or grill pan over medium-high heat. Thread the marinated beef onto skewers.
  6. Grill the skewers for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.
  7. Serve the beef satay skewers hot with the sugar-free cucumber acar on the side.
