- 1 cup unsalted butter, softened
- 1 cup erythritol or granulated sugar substitute
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream the softened butter and erythritol until light and fluffy.
- Add the eggs and vanilla, mixing until combined.
- In another bowl, whisk together almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix well.
- Fold in the chopped pecans.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Make sure to use room temperature butter for better mixing.
- Store in an airtight container for up to a week.
