Delicious and low-carb Keto Butter Pecan Cookies that satisfy your sweet cravings without the carbs!


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup erythritol or granulated sugar substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped pecans


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream the softened butter and erythritol until light and fluffy.
  3. Add the eggs and vanilla, mixing until combined.
  4. In another bowl, whisk together almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix well.
  6. Fold in the chopped pecans.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
