Delicious Keto Cannoli filled with a rich, creamy filling that fits your low-carb lifestyle.


Ingredients

  • 1 cup almond flour
  • 2 tablespoons erythritol
  • 1/2 cup shredded mozzarella cheese
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup ricotta cheese
  • 1/4 cup powdered erythritol
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini sugar-free chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and mozzarella cheese until well combined.
  3. Add the egg, vanilla extract, and cinnamon; mix until a dough forms.
  4. Roll out the dough thinly and cut into circles.
  5. Place on a greased baking sheet and bake for 10-12 minutes until golden.
  6. Allow to cool before filling.
  7. In another bowl, mix ricotta, powdered erythritol, and vanilla extract until smooth.
  8. Add chocolate chips to the ricotta mixture and stir to combine.
  9. Pipe the filling into the cooled shells.
  10. Chill before serving.

Notes

  • Store in the refrigerator and consume within 3 days for best freshness.
  • For a more decadent filling, add a tablespoon of heavy cream to the ricotta mixture.
