- 1/2 cup shredded mozzarella cheese
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup ricotta cheese
- 1/4 cup powdered erythritol
- 1/2 teaspoon vanilla extract
- 1/4 cup mini sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, erythritol, and mozzarella cheese until well combined.
- Add the egg, vanilla extract, and cinnamon; mix until a dough forms.
- Roll out the dough thinly and cut into circles.
- Place on a greased baking sheet and bake for 10-12 minutes until golden.
- Allow to cool before filling.
- In another bowl, mix ricotta, powdered erythritol, and vanilla extract until smooth.
- Add chocolate chips to the ricotta mixture and stir to combine.
- Pipe the filling into the cooled shells.
- Chill before serving.

- For a more decadent filling, add a tablespoon of heavy cream to the ricotta mixture.
