Description

Keto Caramelized Banana and Coconut Cream Pie delights your taste buds with its rich flavors and creamy texture, perfect for a low-carb dessert.

Ingredients

Scale
  • 1 ½ cups almond flour
  • ½ cup unsweetened shredded coconut
  • ¼ cup erythritol sweetener
  • ½ teaspoon sea salt
  • ½ cup melted unsalted butter
  • 1 teaspoon pure vanilla extract
  • 3 ripe bananas, cut into rounds
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown erythritol
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • ¼ cup powdered erythritol
  • ¼ teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix together the almond flour, shredded coconut, erythritol, and sea salt.
  3. Pour in the melted butter and vanilla extract, stirring until the mixture holds together like damp sand.
  4. Firmly press this mixture into a 9-inch pie dish, covering the bottom and sides evenly.
  5. Bake for 10 to 12 minutes or until the crust turns a lovely golden brown. Allow it to cool completely.
  6. While the crust is cooling, melt 2 tablespoons of butter in a skillet over medium heat.
  7. Add the sliced bananas and sprinkle with brown erythritol. Sauté for about 3 to 4 minutes, stirring gently, until the bananas are beautifully caramelized.
  8. Remove from heat and let them cool for a bit.
  9. In another bowl, whip the heavy cream until it reaches soft peaks.
  10. Gradually mix in the powdered erythritol and vanilla extract, continuing to whip until stiff peaks form.
  11. Carefully fold in the cooled caramelized bananas, ensuring they are evenly distributed.
  12. Spoon the banana cream mixture into the cooled pie crust, smoothing the top with a spatula.
  13. Place the pie in the refrigerator for at least 2 hours to allow it to set properly before slicing and serving.

Notes

  • For an extra touch, consider adding a dash of cinnamon to the bananas while they cook.
  • You can swap out the bananas for your favorite berries for a refreshing variation.
