Delicious low-carb pizza bites made with cauliflower, perfect for a keto diet.
Ingredients

- 1 head cauliflower
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 large eggs
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup pizza sauce
- 1/2 cup pepperoni slices
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and chop the cauliflower into florets.
- Pulse the cauliflower florets in a food processor until it resembles rice.
- Steam the riced cauliflower for about 5 minutes until tender.
- Let it cool, then drain any excess moisture.
- In a bowl, mix cauliflower, mozzarella, Parmesan, eggs, Italian seasoning, garlic powder, salt, and pepper.
- Form small balls with the mixture and place them on a baking sheet lined with parchment paper.
- Bake for 20 minutes or until golden brown.
- Add a dollop of pizza sauce and a slice of pepperoni on each bite.
- Return to the oven and bake for an additional 5 minutes.
Notes
- These pizza bites can be frozen and reheated later.
- Try adding other toppings like bell peppers or olives.
