Description

Delicious low-carb pizza bites made with cauliflower, perfect for a keto diet.


Ingredients

Scale
  • 1 head cauliflower
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 large eggs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup pizza sauce
  • 1/2 cup pepperoni slices


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the cauliflower into florets.
  3. Pulse the cauliflower florets in a food processor until it resembles rice.
  4. Steam the riced cauliflower for about 5 minutes until tender.
  5. Let it cool, then drain any excess moisture.
  6. In a bowl, mix cauliflower, mozzarella, Parmesan, eggs, Italian seasoning, garlic powder, salt, and pepper.
  7. Form small balls with the mixture and place them on a baking sheet lined with parchment paper.
  8. Bake for 20 minutes or until golden brown.
  9. Add a dollop of pizza sauce and a slice of pepperoni on each bite.
  10. Return to the oven and bake for an additional 5 minutes.

Notes

  • These pizza bites can be frozen and reheated later.
  • Try adding other toppings like bell peppers or olives.
