A delicious and easy Keto Chicken Roulade filled with cream cheese, mozzarella, spinach, and sun-dried tomatoes, topped with a flavorful olive tapenade.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup black olives, pitted and chopped
  • 1 tablespoon capers, rinsed and chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.
  3. In a small bowl, mix together garlic powder, onion powder, oregano, salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
  4. In another bowl, combine the cream cheese, mozzarella cheese, spinach, and sun-dried tomatoes. Spread this mixture evenly over the chicken breasts.
  5. Starting from one end, carefully roll each chicken breast tightly into a roulade and secure with toothpicks if necessary.
  6. In a skillet over medium heat, add olive oil. Once hot, sear the roulades for 2-3 minutes on each side until golden brown.
  7. Transfer the seared roulades to the prepared baking sheet and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
  8. While the chicken is baking, prepare the olive tapenade by mixing the chopped olives, capers, and parsley in a small bowl.
  9. Once the chicken is done, let it rest for 5 minutes before slicing. Serve topped with the olive tapenade.

Notes

  • For added flavor, consider marinating the chicken in olive oil, lemon juice, and herbs for a few hours before preparation.
  • You can substitute the cream cheese with goat cheese for a tangy twist.
