Description
A delicious and easy Keto Chicken Roulade filled with cream cheese, mozzarella, spinach, and sun-dried tomatoes, topped with a flavorful olive tapenade.

- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup black olives, pitted and chopped
- 1 tablespoon capers, rinsed and chopped
- 1 tablespoon fresh parsley, chopped
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.
- In a small bowl, mix together garlic powder, onion powder, oregano, salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
- In another bowl, combine the cream cheese, mozzarella cheese, spinach, and sun-dried tomatoes. Spread this mixture evenly over the chicken breasts.
- Starting from one end, carefully roll each chicken breast tightly into a roulade and secure with toothpicks if necessary.
- In a skillet over medium heat, add olive oil. Once hot, sear the roulades for 2-3 minutes on each side until golden brown.
- Transfer the seared roulades to the prepared baking sheet and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
- While the chicken is baking, prepare the olive tapenade by mixing the chopped olives, capers, and parsley in a small bowl.
- Once the chicken is done, let it rest for 5 minutes before slicing. Serve topped with the olive tapenade.
Notes
- For added flavor, consider marinating the chicken in olive oil, lemon juice, and herbs for a few hours before preparation.
- You can substitute the cream cheese with goat cheese for a tangy twist.
