Description

A low-carb version of a classic dirty rice using hearts of palm for a healthy twist.


Ingredients

Scale
  • 1 can hearts of palm, drained and chopped
  • 1 cup cauliflower rice
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion, bell pepper, and garlic, sautéing until soft.
  3. Stir in cauliflower rice and cook for another 5 minutes.
  4. Add the chopped hearts of palm and spices, mixing thoroughly.
  5. Cook for an additional 2-3 minutes until heated through. Serve hot.
