Description
A low-carb version of a classic dirty rice using hearts of palm for a healthy twist.
Ingredients

- 1 can hearts of palm, drained and chopped
- 1 cup cauliflower rice
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion, bell pepper, and garlic, sautéing until soft.
- Stir in cauliflower rice and cook for another 5 minutes.
- Add the chopped hearts of palm and spices, mixing thoroughly.
- Cook for an additional 2-3 minutes until heated through. Serve hot.
Notes
- Adjust seasoning to taste.
- Can be served as a side dish or main dish.
- Store leftovers in an airtight container in the refrigerator.
