Ingredients

  • 1 cup heavy whipping cream
  • 1 cup unsweetened coconut milk
  • 4 large eggs
  • 1/2 cup monk fruit sweetener or your choice of keto-friendly sweetener
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup sugar-free caramel sauce (store-bought or homemade)
  • 1 tablespoon coconut oil (for greasing the pan)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round baking dish thoroughly with coconut oil and set it aside.
  3. In a medium saucepan, combine the heavy whipping cream and coconut milk over medium heat, stirring occasionally until just about to boil.
  4. Remove from heat and let it cool slightly.
  5. In a large bowl, whisk together the eggs, monk fruit sweetener, vanilla extract, and sea salt until smooth and well blended.
  6. Gradually add the warm cream mixture to the egg mixture, whisking continuously to prevent the eggs from cooking.
  7. Fold in the sugar-free caramel sauce until well mixed.
  8. Pour the custard mixture into the prepared baking dish.
  9. Place this dish inside a larger roasting pan and fill the outer pan with hot water until it reaches halfway up the sides of the custard dish.
  10. Bake for 50-60 minutes, or until the custard is set and a toothpick inserted in the center comes out clean.
  11. Allow the custard to cool at room temperature before transferring it to the refrigerator to chill for at least 4 hours or overnight.
  12. To serve, gently run a knife around the edges of the custard and invert it onto a serving platter, allowing the caramel to flow over the top.
