- 1 cup unsweetened coconut milk
- 4 large eggs

- 1/2 cup sugar-free caramel sauce (store-bought or homemade)
- 1 tablespoon coconut oil (for greasing the pan)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round baking dish thoroughly with coconut oil and set it aside.
- In a medium saucepan, combine the heavy whipping cream and coconut milk over medium heat, stirring occasionally until just about to boil.
- Remove from heat and let it cool slightly.
- In a large bowl, whisk together the eggs, monk fruit sweetener, vanilla extract, and sea salt until smooth and well blended.
- Gradually add the warm cream mixture to the egg mixture, whisking continuously to prevent the eggs from cooking.
- Fold in the sugar-free caramel sauce until well mixed.
- Pour the custard mixture into the prepared baking dish.
- Place this dish inside a larger roasting pan and fill the outer pan with hot water until it reaches halfway up the sides of the custard dish.
- Bake for 50-60 minutes, or until the custard is set and a toothpick inserted in the center comes out clean.
- Allow the custard to cool at room temperature before transferring it to the refrigerator to chill for at least 4 hours or overnight.
- To serve, gently run a knife around the edges of the custard and invert it onto a serving platter, allowing the caramel to flow over the top.
