- 4 ounces sugar-free dark chocolate
- 1/2 cup unsalted butter
- 3 large eggs
- 1/2 cup erythritol or preferred low-carb sweetener
- 1/4 cup almond flour
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the oven to 425°F (220°C).
- Grease four ramekins with butter and dust with cocoa powder.
- Melt the dark chocolate and butter together in a double boiler.
- In a separate bowl, whisk together the eggs, erythritol, and vanilla extract until fluffy.
- Stir in the melted chocolate mixture.
- Fold in the almond flour, baking powder, and salt until smooth.
- Pour the batter into the prepared ramekins.
- Bake for 12-14 minutes until the edges are firm but the center is soft.
- Let cool for 1 minute before inverting onto a plate. Serve warm.
