  • 1 pound ground beef (80% lean)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup unsweetened ketchup (sugar-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine ground beef, almond flour, Parmesan cheese, egg, 2 tablespoons of ketchup, garlic powder, onion powder, oregano, salt, black pepper, Worcestershire sauce, and diced onion. If using, add the bell pepper.
  3. Mix the ingredients together until well combined, being careful not to overmix.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Spread the remaining ketchup on top of the meatloaf for added flavor and moisture.
  6. Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 160°F.
  7. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
