- 1 pound ground beef (80% lean)
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup unsweetened ketchup (sugar-free)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (optional)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine ground beef, almond flour, Parmesan cheese, egg, 2 tablespoons of ketchup, garlic powder, onion powder, oregano, salt, black pepper, Worcestershire sauce, and diced onion. If using, add the bell pepper.
- Mix the ingredients together until well combined, being careful not to overmix.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Spread the remaining ketchup on top of the meatloaf for added flavor and moisture.
- Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 160°F.
- Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

- For added moisture, consider mixing in finely chopped mushrooms or zucchini to the meat mixture.
