- 1 cup erythritol or preferred sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 12 sugar-free chocolate kisses
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, sweetener, egg, vanilla extract, baking soda, and salt. Mix until well combined.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly and bake for 10-12 minutes.
- Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
- Allow to cool before serving.
