Ingredients

- 2 cups almond flour
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 2 large eggs
- 1/2 teaspoon salt
- 1 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- 1 tablespoon butter, for frying
Instructions
- In a bowl, mix almond flour, cheddar cheese, cream cheese, eggs, and salt.
- Knead the dough until smooth, then cover and let rest for 30 minutes.
- Roll out the dough and cut into circles.
- Place a spoonful of bacon and green onions in the center of each circle.
- Fold the dough over and press to seal.
- In a skillet, melt butter over medium heat and fry the pierogies until golden brown.
- Serve hot and enjoy!

- These pierogies can be frozen before cooking for later use.
- Experiment with fillings like mushrooms or sauerkraut for variety.
