- ¼ cup cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup erythritol or other keto sweetener
- 1 large egg
- 2 tablespoons unsweetened almond milk
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- ¼ cup cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together erythritol, egg, almond milk, red food coloring, and vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the softened cream cheese until well incorporated.
- Drop tablespoons of dough onto a lined baking sheet.
- Bake for 10-12 minutes until cookies are set.
- Let cool before serving.
Notes
- For a richer flavor, add ½ teaspoon of espresso powder.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to 3 months.
