Ingredients

Scale
  • 1 ½ cups almond flour
  • ⅓ cup erythritol sweetener
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 16 oz cream cheese, softened
  • ½ cup heavy cream
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ cup low-carb caramel sauce
  • sea salt for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and melted butter until combined.
  3. Press the mixture into the bottom of a lined baking dish.
  4. Bake the crust for 10-12 minutes until golden.
  5. In another bowl, beat the cream cheese until smooth. Add the eggs, heavy cream, vanilla, and salt, and mix until well combined.
  6. Pour the cream cheese mixture over the baked crust.
  7. Drizzle the low-carb caramel sauce on top and swirl it with a knife.
  8. Bake for an additional 25-30 minutes or until set.
  9. Allow to cool, then chill in the refrigerator for 2 hours.
  10. Top with sea salt before serving.

Notes

  • You can substitute erythritol with your favorite low-carb sweetener.
  • Make sure the cream cheese is at room temperature for easier mixing.
