Delicious keto-friendly cookie bars inspired by the classic Samoa cookies.
Ingredients

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or other keto sweetener
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, erythritol, shredded coconut, baking powder, and salt.
- Add softened butter and vanilla extract to the dry ingredients, mixing until combined.
- Press the dough evenly into the prepared baking pan.
- Bake for 15-20 minutes or until golden brown.
- Remove from oven and let cool in the pan.
- In a small saucepan, melt the sugar-free chocolate chips over low heat.
- Drizzle the melted chocolate over the cooled bars.
- Let the bars set before slicing into squares.
Notes
- Store in an airtight container for up to a week.
- These bars can be frozen for longer storage.
