Description

Delicious keto-friendly cookie bars inspired by the classic Samoa cookies.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or other keto sweetener
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, shredded coconut, baking powder, and salt.
  3. Add softened butter and vanilla extract to the dry ingredients, mixing until combined.
  4. Press the dough evenly into the prepared baking pan.
  5. Bake for 15-20 minutes or until golden brown.
  6. Remove from oven and let cool in the pan.
  7. In a small saucepan, melt the sugar-free chocolate chips over low heat.
  8. Drizzle the melted chocolate over the cooled bars.
  9. Let the bars set before slicing into squares.

  • These bars can be frozen for longer storage.
