Description
A delicious low-carb alternative to traditional sesame noodles, using zucchini noodles or shirataki noodles.
Ingredients

- 2 medium zucchini, spiralized
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, finely grated
- 1 tablespoon sesame seeds
- 2 tablespoons green onions, sliced
- 1 tablespoon peanut butter (optional)
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add the spiralized zucchini and sauté for 2-3 minutes until slightly tender.
- In a bowl, whisk together soy sauce, rice vinegar, garlic, ginger, and peanut butter if using.
- Pour the sauce over the zucchini and mix well.
- Cook for another 1-2 minutes, until everything is heated through.
- Sprinkle with sesame seeds and green onions before serving.
Notes
- For extra protein, add cooked chicken or shrimp.
- This dish is best served immediately.
