Description

A delicious low-carb alternative to traditional sesame noodles, using zucchini noodles or shirataki noodles.


Ingredients

Scale
  • 2 medium zucchini, spiralized
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, finely grated
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions, sliced
  • 1 tablespoon peanut butter (optional)


Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add the spiralized zucchini and sauté for 2-3 minutes until slightly tender.
  3. In a bowl, whisk together soy sauce, rice vinegar, garlic, ginger, and peanut butter if using.
  4. Pour the sauce over the zucchini and mix well.
  5. Cook for another 1-2 minutes, until everything is heated through.
  6. Sprinkle with sesame seeds and green onions before serving.
