Description

A delicious keto-friendly meatloaf made with Italian flavors, served on a sheet pan with veggies.


Ingredients

  • 2 pounds ground beef
  • 1 cup almond flour
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1/2 cup diced onion
  • 1/2 cup sugar-free marinara sauce


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, almond flour, eggs, mozzarella, Parmesan, parsley, garlic, oregano, salt, and pepper.
  3. Shape the mixture into a loaf and place it on a baking sheet.
  4. Surround the meatloaf with diced bell peppers, zucchini, and onion.
  5. Spread marinara sauce over the top of the meatloaf.
  6. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let it rest for 10 minutes, then slice and serve.

Notes

  • You can substitute ground turkey for ground beef if desired.
  • Add your choice of low-carb vegetables around the meatloaf for extra flavor.
