A delicious and healthy soup that combines the flavors of stuffed peppers in a low-carb format.


Ingredients

  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cauliflower rice


Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onions, bell peppers, and garlic, cooking until softened.
  3. Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add cauliflower rice and cook for an additional 10 minutes.
