- 1 onion, diced
- 2 bell peppers, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup cauliflower rice
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onions, bell peppers, and garlic, cooking until softened.
- Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add cauliflower rice and cook for an additional 10 minutes.
