Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 taco seasoning packet
  • 1 cup diced bell pepper
  • 1 cup diced tomatoes
  • 2 cups shredded cheese
  • 1 cup sour cream
  • 1 tablespoon olive oil
  • 2 cups cauliflower rice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and add the diced onion and bell pepper. Sauté until softened.
  3. Add the ground beef and cook until browned.
  4. Stir in the taco seasoning and diced tomatoes, then mix in the cauliflower rice.
  5. Transfer the mixture to a baking dish and layer with sour cream and cheese on top.
