- 1 cup diced onion
- 1 taco seasoning packet
- 1 cup diced bell pepper
- 1 cup diced tomatoes
- 2 cups shredded cheese
- 1 cup sour cream
- 1 tablespoon olive oil
- 2 cups cauliflower rice
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and add the diced onion and bell pepper. Sauté until softened.
- Add the ground beef and cook until browned.
- Stir in the taco seasoning and diced tomatoes, then mix in the cauliflower rice.
- Transfer the mixture to a baking dish and layer with sour cream and cheese on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let cool slightly before serving.
