Ingredients

- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol
- 1/2 tsp peppermint extract
- 1/4 cup coconut oil, melted
- 1/4 tsp salt
Instructions
- In a large bowl, mix almond flour, cocoa powder, powdered erythritol, and salt.
- Add melted coconut oil and peppermint extract, and mix until combined.
- Form the dough into small discs and place on a baking sheet lined with parchment paper.
- Chill the discs in the fridge until firm, about 30 minutes.
- Once firm, dip each disc in melted sugar-free dark chocolate.
- Let the excess chocolate drip off and place them back on the baking sheet.
- Chill again until the chocolate is set.
Notes
- Store in an airtight container in the fridge for up to a week.
- These cookies are best enjoyed chilled.
