Description

Delicious and easy-to-make Keto Thin Mints that are sugar-free and perfect for satisfying your chocolate cravings.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol
  • 1/2 tsp peppermint extract
  • 1/4 cup coconut oil, melted
  • 1/4 tsp salt


Instructions

  1. In a large bowl, mix almond flour, cocoa powder, powdered erythritol, and salt.
  2. Add melted coconut oil and peppermint extract, and mix until combined.
  3. Form the dough into small discs and place on a baking sheet lined with parchment paper.
  4. Chill the discs in the fridge until firm, about 30 minutes.
  5. Once firm, dip each disc in melted sugar-free dark chocolate.
  6. Let the excess chocolate drip off and place them back on the baking sheet.
  7. Chill again until the chocolate is set.

  • Store in an airtight container in the fridge for up to a week.
