Description

A keto-friendly version of lasagna using zucchini instead of traditional noodles for a low-carb meal.


Ingredients

  • 2 large zucchinis
  • 1 lb ground beef or Italian sausage
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce (sugar-free)
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips and sprinkle with salt. Place them on paper towels to draw out excess moisture for about 15 minutes.
  2. In a skillet over medium heat, heat the olive oil. Add the ground beef or sausage and cook until browned. Season with salt, pepper, oregano, and garlic powder. Drain any excess fat.
  3. In a bowl, mix together the ricotta cheese, egg, and a pinch of salt and pepper until well combined.
  4. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish. Layer zucchini strips to cover, followed by half of the meat mixture, and then half of the ricotta mixture. Sprinkle with mozzarella cheese.
  5. Repeat the layers: marinara sauce, zucchini, remaining meat mixture, remaining ricotta mixture, and finish with the rest of the mozzarella cheese on top.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  7. Let the lasagna cool for about 10 minutes before slicing. Garnish with fresh basil if desired.

Notes

  • For extra flavor, consider adding spinach or mushrooms to the meat mixture.
  • You can substitute the marinara sauce with a homemade tomato sauce if preferred; just ensure it is low in sugar.
