Description

A refreshing pasta salad made with palmini noodles, chicken, and a zesty lemon garlic dressing.


Ingredients

  • 12 oz Palmini noodles
  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Prepare the Palmini noodles according to package instructions and drain.
  2. In a large bowl, combine the Palmini noodles, chicken, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a separate bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to combine well.
  5. Chill the salad for at least 30 minutes before serving.
