A refreshing pasta salad made with palmini noodles, chicken, and a zesty lemon garlic dressing.
Ingredients

- 12 oz Palmini noodles
- 2 cups cooked chicken, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Prepare the Palmini noodles according to package instructions and drain.
- In a large bowl, combine the Palmini noodles, chicken, cherry tomatoes, cucumber, red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine well.
- Chill the salad for at least 30 minutes before serving.
Notes
- For a vegetarian option, substitute chicken with chickpeas.
- Serve chilled for the best flavor.
