  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the softened cream cheese and butter. Beat with an electric mixer on medium speed until smooth and creamy.
  2. Add the unsweetened cocoa powder, powdered erythritol, vanilla extract, and salt to the bowl. Mix on low speed until all ingredients are well incorporated and the mixture is smooth.
  3. Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  4. Pour the fudge mixture into the prepared dish, spreading it evenly with a spatula.
  5. Refrigerate the fudge for at least 2 hours or until it is firm enough to cut into squares.
  6. Once set, lift the fudge out of the dish using the parchment paper overhang and cut into 16 squares.
