Description

Delicious and low-carb mascarpone crepes perfect for a keto diet.


Ingredients

  • 1 cup almond flour
  • 4 large eggs
  • 1/2 cup mascarpone cheese
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons butter


Instructions

  1. In a mixing bowl, combine almond flour, eggs, mascarpone cheese, vanilla extract, and salt.
  2. Blend until smooth.
  3. Heat a non-stick skillet over medium heat and add a little butter.
  4. Pour about 1/4 cup of batter into the skillet and swirl to create a thin layer.
  5. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute.
  6. Repeat with remaining batter.
