Ingredients

- 1 cup almond flour
- 4 large eggs
- 1/2 cup mascarpone cheese
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons butter
Instructions
- In a mixing bowl, combine almond flour, eggs, mascarpone cheese, vanilla extract, and salt.
- Blend until smooth.
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour about 1/4 cup of batter into the skillet and swirl to create a thin layer.
- Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute.
- Repeat with remaining batter.
Notes
- These crepes can be filled with your favorite low-carb fillings.
- Store any leftovers in the refrigerator for up to 3 days.
