- 4 large bell peppers
- 1 pound ground turkey
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil and cook ground turkey until browned.
- Add cooked quinoa, diced tomatoes, Italian seasoning, garlic powder, salt, and pepper to the skillet.
- Stir in feta cheese and mix well.
- Stuff each bell pepper with the turkey mixture.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes.
- Serve hot and enjoy!
Notes
- For extra flavor, add some chopped olives or sun-dried tomatoes to the filling.
- These can be made ahead of time and stored in the refrigerator before baking.
- To make it dairy-free, omit the feta cheese or use a dairy-free alternative.
