- 2 pieces miso-marinated cod fillets
- 3 cups bok choy, chopped
- 1 tablespoon sesame oil
- 2 sheets nori, cut into strips
- 1 cup cooked rice
- 2 teaspoons sesame seeds
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Place the miso cod on a baking sheet and bake for 15-20 minutes until flaky.
- In a pan, heat the sesame oil over medium heat and sauté the bok choy until wilted.
- Prepare the rice according to package instructions.
- Assemble the bowl by adding rice, sautéed bok choy, baked cod, and nori strips.
- Drizzle with soy sauce and rice vinegar, and sprinkle with sesame seeds before serving.
Notes
- For extra flavor, add pickled ginger on top.
- Substitute cod with salmon if preferred.
