Description

Deliciously moist blueberry muffins featuring cream cheese for a richer flavor.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup cream cheese, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh blueberries
  • ½ cup milk


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the cream cheese, sugars, and vanilla until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Alternate adding the flour mixture and milk to the cream cheese mixture, starting and ending with flour.
  6. Gently fold in blueberries.
  7. Divide the batter among the muffin cups.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.

Notes

  • For best results, use fresh blueberries.
  • Allow muffins to cool for a few minutes in the pan before transferring to a wire rack.
