- 1 cup granulated erythritol
- 2 tablespoons gelatin powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
Instructions
- In a saucepan, combine water and erythritol over medium heat until dissolved.
- Stir in gelatin and let it bloom for about 5 minutes.
- Beat the mixture with an electric mixer until it forms soft peaks.
- Add vanilla extract, cream of tartar, and salt, continuing to beat until stiff peaks form.
- Transfer the marshmallow mixture to a lined baking dish and smooth the top.
- Let it set for at least 4 hours or until firm.
- Cut into squares and enjoy!
