Description

Delicious Pesto Prosciutto Cauliflower Crust Pizza that combines a healthy cauliflower crust with flavorful pesto and savory prosciutto.


Ingredients

  • 1 medium cauliflower head, riced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup parmesan cheese, grated
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pesto
  • 4 ounces prosciutto, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the cauliflower and remove the leaves. Cut into florets and rice the cauliflower using a food processor.
  3. In a large bowl, combine the riced cauliflower, mozzarella, parmesan, eggs, garlic powder, Italian seasoning, salt, and black pepper.
  4. Spread the mixture onto a baking sheet lined with parchment paper and shape it into a crust.
  5. Bake for 25-30 minutes, or until golden brown.
  6. Spread the pesto over the baked crust, then layer with prosciutto and cherry tomatoes.
  7. Return to the oven and bake for an additional 10 minutes.
  8. Garnish with fresh basil before serving.

  • Make sure to squeeze out excess moisture from the riced cauliflower for a crispy crust.
