- 1 medium cauliflower head, riced
- 1 cup shredded mozzarella cheese
- 1/2 cup parmesan cheese, grated
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pesto
- 4 ounces prosciutto, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the cauliflower and remove the leaves. Cut into florets and rice the cauliflower using a food processor.
- In a large bowl, combine the riced cauliflower, mozzarella, parmesan, eggs, garlic powder, Italian seasoning, salt, and black pepper.
- Spread the mixture onto a baking sheet lined with parchment paper and shape it into a crust.
- Bake for 25-30 minutes, or until golden brown.
- Spread the pesto over the baked crust, then layer with prosciutto and cherry tomatoes.
- Return to the oven and bake for an additional 10 minutes.
- Garnish with fresh basil before serving.
Notes
- Make sure to squeeze out excess moisture from the riced cauliflower for a crispy crust.
- Feel free to add more toppings according to your preference.
