Description
A quick and healthy stir-fry recipe using zoodles and pesto.
Ingredients
Scale
- 2 medium zucchini, spiralized
- 1 cup cherry tomatoes, halved
- 1 cup bell pepper, sliced
- 1 cup broccoli florets
- 1 cup cooked chicken or tofu, cubed
- 1/4 cup pesto
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add the zucchini and cook for 2-3 minutes until slightly tender.
- Add the cherry tomatoes, bell pepper, and broccoli, and stir-fry for another 5 minutes.
- Stir in the cooked chicken or tofu.
- Remove from heat and mix in the pesto until well combined.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- For a vegan option, substitute chicken with tofu.
- Try adding your favorite vegetables for more variety.
