Description

A quick and healthy stir-fry recipe using zoodles and pesto.


Ingredients

Scale
  • 2 medium zucchini, spiralized
  • 1 cup cherry tomatoes, halved
  • 1 cup bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup cooked chicken or tofu, cubed
  • 1/4 cup pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the zucchini and cook for 2-3 minutes until slightly tender.
  3. Add the cherry tomatoes, bell pepper, and broccoli, and stir-fry for another 5 minutes.
  4. Stir in the cooked chicken or tofu.
  5. Remove from heat and mix in the pesto until well combined.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

  • For a vegan option, substitute chicken with tofu.
  • Try adding your favorite vegetables for more variety.
