- 1 pound pork belly, diced
- 1 cup kimchi, chopped
- 4 large eggs
- 2 tablespoons vegetable oil
- 2 green onions, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the diced pork belly and cook until crispy and browned, about 10 minutes.
- Stir in the chopped kimchi and cook for an additional 3-4 minutes.
- Push the pork and kimchi to the side of the pan and crack the eggs into the empty space.
- Cook the eggs to your desired doneness.
- Add the soy sauce and sesame oil, mixing everything together before removing from heat.
- Garnish with sliced green onions before serving.
Notes
- For extra heat, add some gochujang or chili flakes.
- Serve with steamed rice for a complete meal.
