- 1 pound pork tenderloin
- 4 ounces Gorgonzola cheese, crumbled
- 1 cup walnuts, chopped
- 2 cups radicchio, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin with salt and pepper, then sear in a hot skillet with olive oil until browned on all sides.
- Transfer the pork to the oven and roast for about 20-25 minutes, or until internal temperature reaches 145°F (63°C).
- While the pork is roasting, prepare the radicchio and walnuts in a large bowl, adding balsamic vinegar.
- Once the pork is done, let rest for 5 minutes before slicing.
- Toss the sliced pork with the radicchio and walnut mixture, then top with crumbled Gorgonzola cheese before serving.
