Description

A deliciously unique dish featuring tender pork, rich Gorgonzola, and crunchy walnuts, served with fresh radicchio.


Ingredients

  • 1 pound pork tenderloin
  • 4 ounces Gorgonzola cheese, crumbled
  • 1 cup walnuts, chopped
  • 2 cups radicchio, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper, then sear in a hot skillet with olive oil until browned on all sides.
  3. Transfer the pork to the oven and roast for about 20-25 minutes, or until internal temperature reaches 145°F (63°C).
  4. While the pork is roasting, prepare the radicchio and walnuts in a large bowl, adding balsamic vinegar.
  5. Once the pork is done, let rest for 5 minutes before slicing.
  6. Toss the sliced pork with the radicchio and walnut mixture, then top with crumbled Gorgonzola cheese before serving.
