Description

Savory Parmesan & Herb Almond Crackers are irresistible cheesy herb-infused almond crisps that make a perfect snack.

Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup finely grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon sea salt
  • 1 large egg
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water

Instructions

  1. Begin by setting your oven to 350°F and prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, mix together the almond flour, Parmesan cheese, basil, rosemary, onion powder, garlic powder, cayenne pepper, and sea salt until evenly combined.
  3. In another bowl, beat the egg, olive oil, and water together until smooth and homogenous.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a cohesive dough forms. If the mixture appears too dry, incorporate additional water, a teaspoon at a time, until it holds together.
  5. Place the dough between two sheets of parchment paper and roll it out to a thickness of about 1/8 inch.
  6. Peel off the top layer of parchment and use a sharp knife or pizza cutter to slice the dough into squares or your preferred shapes.
  7. Carefully move the cut pieces onto the prepared baking sheet, ensuring there’s space between each cracker.
  8. Bake for approximately 12-15 minutes, or until the edges turn a lovely golden brown. Keep a close watch to prevent over-baking.
  9. Allow the crackers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra cheesy flavor, consider mixing in 1/4 cup of shredded mozzarella cheese.
  • Feel free to swap in different herbs like dill or parsley for a fresh twist.
