Ingredients

- 1 head cauliflower, chopped
- 4 ounces bacon, diced
- 1 pound scallops
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Boil cauliflower until tender, about 10-12 minutes.
- In a skillet, cook bacon until crispy.
- Remove bacon and set aside, leaving the drippings in the pan.
- Add butter to the skillet and brown for 2-3 minutes.
- Season scallops with salt and pepper, then sear in the brown butter for 2-3 minutes on each side.
- Smash the cauliflower and mix in the bacon and remaining butter.
- Serve the scallops over the cauliflower smash.
Notes
- For best results, use fresh scallops.
- Adjust seasoning according to your taste.
