Description

A delightful blend of pan-seared scallops with a rich brown butter sauce, combined with creamy cauliflower and crisp bacon.


Ingredients

Scale
  • 1 head cauliflower, chopped
  • 4 ounces bacon, diced
  • 1 pound scallops
  • 4 tablespoons butter
  • Salt to taste
  • Pepper to taste


Instructions

  1. Boil cauliflower until tender, about 10-12 minutes.
  2. In a skillet, cook bacon until crispy.
  3. Remove bacon and set aside, leaving the drippings in the pan.
  4. Add butter to the skillet and brown for 2-3 minutes.
  5. Season scallops with salt and pepper, then sear in the brown butter for 2-3 minutes on each side.
  6. Smash the cauliflower and mix in the bacon and remaining butter.
  7. Serve the scallops over the cauliflower smash.
