This one-pan meal features juicy chicken thighs roasted with lemon, garlic, and asparagus for a deliciously easy dinner.

- 4 chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound asparagus, trimmed
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade.
- Arrange the chicken on a sheet pan and roast for 25 minutes.
- Add the asparagus to the pan and roast for an additional 15 minutes or until the chicken is cooked through and asparagus is tender.
- Serve warm.
Notes
- For extra flavor, marinate the chicken thighs for up to 24 hours.
- Feel free to swap out asparagus for your favorite seasonal vegetables.
