Description

This one-pan meal features juicy chicken thighs roasted with lemon, garlic, and asparagus for a deliciously easy dinner.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound asparagus, trimmed


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade.
  4. Arrange the chicken on a sheet pan and roast for 25 minutes.
  5. Add the asparagus to the pan and roast for an additional 15 minutes or until the chicken is cooked through and asparagus is tender.
  6. Serve warm.

Notes

  • For extra flavor, marinate the chicken thighs for up to 24 hours.
  • Feel free to swap out asparagus for your favorite seasonal vegetables.
