Description

Tender and flavorful lamb shanks cooked to perfection with a delightful mint gremolata.


Ingredients

Scale
  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup fresh mint, chopped
  • 1/2 cup parsley, chopped
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice


Instructions

  1. Season the lamb shanks with salt and pepper.
  2. Heat the olive oil in a skillet over medium heat and brown the lamb shanks on all sides.
  3. Add onions, garlic, and carrots to the slow cooker.
  4. Place the browned lamb shanks on top of the vegetables.
  5. In a bowl, mix red wine, beef broth, tomato paste, rosemary, and thyme; pour over the lamb shanks.
  6. Cook on low for 8 hours or on high for 4 hours until the meat is tender.
  7. In a separate bowl, combine mint, parsley, lemon zest, and lemon juice to make the gremolata.
  8. Serve the lamb shanks topped with gremolata.

Notes

  • For a richer flavor, feel free to use homemade beef broth.
  • Gremolata can be made ahead and stored in the refrigerator.
  • Serve with mashed potatoes or a crusty bread.
