Tender and flavorful lamb shanks cooked to perfection with a delightful mint gremolata.
Ingredients

- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 cup red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup fresh mint, chopped
- 1/2 cup parsley, chopped
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
Instructions
- Season the lamb shanks with salt and pepper.
- Heat the olive oil in a skillet over medium heat and brown the lamb shanks on all sides.
- Add onions, garlic, and carrots to the slow cooker.
- Place the browned lamb shanks on top of the vegetables.
- In a bowl, mix red wine, beef broth, tomato paste, rosemary, and thyme; pour over the lamb shanks.
- Cook on low for 8 hours or on high for 4 hours until the meat is tender.
- In a separate bowl, combine mint, parsley, lemon zest, and lemon juice to make the gremolata.
- Serve the lamb shanks topped with gremolata.
Notes
- For a richer flavor, feel free to use homemade beef broth.
- Gremolata can be made ahead and stored in the refrigerator.
- Serve with mashed potatoes or a crusty bread.
