Delicious and healthy smoked salmon stuffed avocado boats, perfect for a light lunch or appetizer.


Ingredients

  • 2 ripe avocados
  • 4 ounces smoked salmon
  • 1/4 cup cream cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon capers
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste


Instructions

  1. Cut the avocados in half and remove the pit.
  2. In a bowl, combine cream cheese, lemon juice, red onion, capers, and dill.
  3. Fold in the smoked salmon and mix until well combined.
  4. Fill each avocado half with the smoked salmon mixture.
  5. Season with salt and pepper to taste.
  6. Serve immediately and enjoy!
