Ingredients

- 2 cups cooked chicken, shredded
- 1 can artichoke hearts, drained and chopped
- 2 cups fresh spinach, chopped
- 1 cup cream cheese
- 4 cups chicken broth
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large pot, combine chicken broth, garlic powder, onion powder, salt, and pepper.
- Add the shredded chicken, artichoke hearts, and spinach to the pot.
- Bring to a simmer over medium heat.
- Stir in the cream cheese until melted and smooth.
- Add the shredded cheese, stirring until melted and well combined.
- Serve hot, garnished with additional spinach if desired.
Notes
- This soup can be made ahead of time and stored in the fridge for up to 3 days.
- Freeze any leftovers in an airtight container for up to 2 months.
